We are using salescart pro with the newest updates and our customers are able to order without having to enter their ccv code on credit card orders. Also, when we download our orders in Access, there is not a field for the ccv code but there is a ccv code field in our order form. Help please. Thanks.

What you are describing is how the software was designed to work.

It is against the visa/mastercard regulations to store the CVVS code. It is considered magnetic data. If you store that data, you may be fined in excess of a Million dollars once you are caught by Visa/Mastercard. Don't do it. When you are caught, they will put you out of business.

You can also process orders without the CVV2 data. Its not required...just lowers your rate in some small circumstances. If you want to force customers to enter it, then simply make it a "required" field using FrontPage or Dreamweaver Field validation for the payment2.asp page.
