How/where do I assign a specific weight to a product option so that the weight can be be used in the shipping calculation.

Did you ever resolve this. I would like to do the same thing that I think you were trying to do. I want the system to add to the weight according to option that is selected.

It would be great if there was a weight diliminater for the shipping like there is for adding to the cost of an item($).

there is a weight field in the item setup.
